Creamy Leeks with Feta and Pine Nuts

This dish comes together in 10 minutes or less!  Wonderful as a breakfast side to scrambled eggs, or spooned over whole wheat pizza dough and baked for a nutritious and elegant weeknight dinner :)

What (your ingredients):

2 leeks

1 tablespoon olive oil

Pinch of salt and pepper

¼ teaspoon red pepper flakes (optional)

1 clove garlic, minced

4 tablespoons milk

3-4 ounces light feta cheese

2 tablespoons pine nuts

How (your directions):

Cut tough, dark green parts from the leeks and the end of the bulb.  Cut each leek lengthwise down the middle and rinse dirt and grit from between the layers:

Heat olive oil in a skillet over medium-low heat.  Slice leek halves into thin half-moons and sauté for 5 minutes:

Add salt, pepper, red pepper flakes (if using) and garlic and sauté for 1-2 minutes. 

Add milk and stir until leeks have absorbed all the liquid.  Crumble feta and pine nuts over the top and remove from heat.

Serve hot or room temp and enjoy!
