Festive Matcha Granola

Festive Matcha Granola

The colors of this granola are absolutely stunning, with the green of matcha powder and red of goji berries creating the perfect holiday flair!  This granola has ZERO added sugar, and the caffeine in matcha creates an “alert calm,” guaranteeing a perfect start to your morning :) Package in mason jars and top with a ribbon for a cheerful and unique gift.

What (your ingredients):

2 tablespoons coconut oil, melted

2 extra ripe bananas

2 teaspoons matcha powder

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

3 cups thick rolled oats

2 teaspoons chia seeds

2 teaspoons sesame seeds

1/3 cup raw almonds, chopped roughly

1/3 cup coconut flakes

1/3 cup goji berries

1/3 cup dried banana, chopped roughly

How (your directions):

Preheat oven to 375° F.

In a large bowl, combine melted coconut oil and bananas.  Mash bananas until smooth.  Add matcha powder, vanilla extract, and cinnamon stir until well combined.

Add oats, chia seeds, sesame seeds, and almonds.  Mix until all ingredients are evenly distributed.

Spray a baking sheet with nonstick spray and bake for 20 minutes.

Stir and flip granola to bake on the other side for an additional 5 minutes.

Remove from oven and stir in coconut, goji berries, and dried banana.

Allow to cool completely and store in an airtight container for up to a week!

Enjoy over yogurt or sprinkled over oatmeal with berries and a drizzle of honey :)
