This salad hits all the right notes-creamy avocado, crunchy peppers, cooling cucumber, and finished with Thai chili sauce for a sweet and spicy kick. Add your choice of protein (veggie burger, grilled chicken, chickpeas), and your lunch or dinner is perfectly balanced and delicious! Serves 2
What (your ingredients): 1 head green leaf lettuce, washed and chopped into bite-size pieces 1 sweet yellow pepper, diced 1 sweet red pepper, diced ½ large cucumber, peeled and diced 1 avocado, cut into bite-size pieces 3 tablespoons sweet Thai chili sauce (I got mine at Trader Joe's)
How (your directions):
Place all lettuce in a large serving bowl, and drizzle the sweet Thai chili sauce over the lettuce. Toss to coat.
Add yellow and red peppers, cucumber, and avocado.
Divide between two plates, and serve with grilled chicken or a Thai Veggie burger (pictured above, Trader Joe’s of course).
