Spring Pea and Green Onion Salad

Sautéed spring peas and green onions warms and melts the soft herb cheese on the salad greens, creating a velvety dressing for the salad mix. This makes an elegant lunch or dinner to celebrate the bright green vegetables of the Spring season. Serves 2 generously as Main Course, serves 4 as a Side

What (your ingredients): 10 ounces English peas 2 spring onions, green and white parts sliced thinly 1 tablespoon olive oil Salt and pepper, to taste Spring lettuce mix 2 tablespoons balsamic dressing Soft herbed cheese, like Boursin, 1-2 ounces per person

How (your directions):

Heat olive oil in a pan over medium heat. Sauté peas and spring onions 7-10 minutes, until peas are blistered. Salt and pepper to taste.

Meanwhile, toss salad greens with balsamic dressing.

Plate greens in salad bowls, then top with warm peas and onions.

Crumble cheese on top and serve immediately.
