Strawberry and Mint Bamboo Rice
This jade colored rice may be my new favorite food! Bamboo rice has a mild jasmine green tea flavor, which pairs perfectly with sweet strawberries and fresh mint. Add the goat cheese after the rice has cooled so that it doesn’t melt and disintegrate. Perfect for a refreshing and filling lunch! Serves 4
What (the ingredients):
1 tablespoon olive oil
2 shallots, sliced thinly
1 cup bamboo rice
1 tablespoon fresh mint
2 cups water
1 pint strawberries, quartered
4 ounces goat cheese, for serving
Fresh mint, for serving
How (the directions):
In a large saucepan, heat olive oil over medium-low heat. Sauté shallots for 3-4 minutes.
Add bamboo rice and stir until all grains are coated.
Add mint and water, and bring to a simmer.
Cover, turn heat to low, and allow rice to cook for 25 minutes.
Meanwhile, add strawberries to a large mixing bowl.
When rice has finished cooking, add to bowl with strawberries. Cover and refrigerate.
Once cool, serve with fresh goat cheese and a garnish of fresh mint!

Why (the science): How does bamboo rice get its gorgeous color? The chlorophyll from bamboo juice is infused into the grain! Evidently this is an 800 year-old tradition. Just don’t count this green-hued rice a vegetable ;)
