Roasted Cauliflower with Lemon Garlic Tahini Dressing
Roasted Cauliflower with Lemon Garlic Tahini Dressing is the perfect side dish to any meal. Warm, comforting, and super nutritious, the roasted cauliflower is a source of prebiotics, which feed the healthy bacteria in your gut and help support a healthy immune system and aid in digestion. The Lemon Garlic Tahini Dressing is an oil-free, protein-rich, anti-inflammatory dressing (and is so delicious, you’ll want to dip and drizzle it on everything 😉)

Cooking time: 35-40 minutes
What (your ingredients):
2 10-oz. bags of cauliflower florets (or 2 heads of cauliflower, cut into florets)
2 tablespoons avocado oil
¼ teaspoon salt
Lemon Garlic Tahini Dressing
Juice from ½ lemon
2 tablespoons tahini
1 clove garlic, minced
¼ cup water
½ teaspoon salt
How (your directions):
Preheat oven to 400°F.
Place cauliflower florets onto a baking sheet, drizzle with avocado oil and salt, and toss until all florets are evenly coated. Spread cauliflower into one even layer on the baking sheet.
Place baking sheet into oven and roast cauliflower for 35-40 minutes.
Meanwhile, make the Lemon Garlic Tahini Dressing. Add all ingredients to a bowl and whisk to combine.
When the cauliflower is finished roasting, place cauliflower in a serving bowl and drizzle with desired amount of Lemon Garlic Tahini Dressing.
Sprinkle with freshly cracked black pepper if desired.
