Mint Avocado Spring Rolls with Sweet and Sour Peanut Sauce
Don’t be intimidated by making fresh spring rolls- it’s as quick and easy, if not easier, than making burritos! Simply fill your softened rice paper with mint, avocado, and a few fresh veggies and roll into spring roll. The Sweet and Sour Peanut Sauce is addictive and makes eating veggies fun and enjoyable 😉

What (your ingredients):
2 cups hot water
8-10 mint leaves
½ avocado, sliced
1 carrot, grated
6 butter lettuce leaves, hard stems removed
3 pieces rice paper
Sweet and Sour Peanut Sauce
1 tablespoon crunchy peanut butter
1 tablespoon sweet and sour sauce
1 tablespoon peanut powder
2 teaspoons coconut aminos or low-sodium soy sauce
2 teaspoons sriracha hot sauce
2 tablespoons water
How (your directions):
Add the hot water to a wide, shallow bowl.
Dip one piece of rice paper into the hot water for 10-15 seconds until slightly softened and malleable.
Place rice paper flat onto a plate. In the center of the rice paper, leaving about 2 inches in all directions, layer 2-3 mint leaves, 2 slices of avocado, 2 tablespoons grated carrot, and 2 pieces of butter lettuce.
Fold the left and right sides of the rice paper 1 inch toward the center. Then roll the rice paper from the bottom, as if you’re making a burrito.
Place finished spring roll onto a separate plate and repeat with the remaining ingredients.
To prepare the Sweet and Sour Peanut Sauce, simply add all ingredients to a small bowl and stir until smooth.
