Grab-and-Go Energy Rounds
Looking for an easy grab-and-go breakfast item with hardly any added sugar but tastes like a soft oatmeal cookie? Then this is the recipe for you!
Trust me when I say, these energy rounds taste like dessert but are far from dessert in terms of nutrients- these rounds are loaded with fiber, protein, iron, and vitamin A!
Here are your ingredients: 1 tablespoon chia seeds 3 ¼ cups oats ¾ teaspoon salt 1 teaspoon baking powder 1 teaspoon baking soda 2 teaspoons cinnamon ¼ cup pistachios ¼ cup golden raisins 10 dried apricots, cut into pieces 1 cup cooked white beans (I used a 15 oz can of organic northern white beans, rinsed and drained) ¼ cup coconut oil ¼ cup maple syrup ¼ cup unsweetened applesauce 1 teaspoon good vanilla extract
Here are your directions:
Preheat oven to 350˚F. Spray baking sheet with nonstick spray.Mix chia seeds with 3 tablespoons of water and set aside.In a food processor or blender, pulse 1 ¼ cup oats until it resembles a coarse flour. Pour into a large mixing bowl, and add remaining 2 cups oats, salt, baking powder, baking soda, cinnamon, pistachios, raisins, and apricots.In a food processor or blender, combine beans and coconut oil until smooth. Add chia seed gel, maple syrup, applesauce, and vanilla and continue to blend until smooth.Pour wet mixture into mixing bowl over dry mixture. Stir until all dry ingredients are moistened and large ball forms.
Using a standard ice cream scoop or your hands, scoop 10 balls of mixture onto the greased baking sheet. Press down, forming cookie-shaped rounds.Bake for 18 minutes, and let cool completely. Store in an airtight container for 1 week or in the freezer for 1 month. Enjoy!
