Matzo Ball Soup

When anyone in my family is sick, I make this for dinner for its healing and restorative powers. It’s definitely comforting and reminiscent of childhood, even if you’re not under the weather! Serves 4 people-3 matzo balls each

What (your ingredients): 

2 tablespoons olive oil
1 yellow onion, diced
4-5 celery stalks with leaves, diced
4-5 large carrots, diced
2 garlic cloves, minced
4-5 cups vegetable broth
1 bay leaf
¼ teaspoon oregano
¼ teaspoon pepper
⅟8 teaspoon thyme
1 package Matzo Ball Mix (I use Manischewitz)

How (your directions):

Prepare matzo balls according to package. Set aside in refrigerator.

Heat olive oil in Dutch oven. Add onions and cook for 3-4 minutes. Add celery and carrots and stir for 3-4 minutes. Add garlic and stir for 1 minute.

Add remaining ingredients and simmer for 10 minutes, allowing flavors to meld.

Add matzo balls, and cook according to package, about 20 minutes.
