Hippie Bowl

What’s a Hippie Bowl exactly? It is a dish that allows for endless possibilities of combinations of a grain (I used French púy lentils), a fat source (avocado and spicy hummus here), herbs (cilantro), veggies (I used a carrot), protein (semi hard-boiled egg), and…anything else you want! Think nuts and seeds, roasted, steamed, or raw vegetables, kimchi. Get creative, have fun in the kitchen, and rest assured it’s a nutritious bowl of superfoods!

What (your ingredients): 

1/3 cups lentils or grain/bean of choice, warmed
½ avocado, sliced
1 tablespoon hummus
1 green onion, finely chopped
1 tablespoon cilantro, finely chopped or left whole
1 medium carrot, finely sliced
1 soft-boiled egg Drizzle of hot sauce Salt and pepper to taste

How (your directions):

Simply assemble in a pasta bowl! How easy is that?
